You will need the following:
- 4 (15 oz.) cans white beans, drained
- 2 tsp. cumin
- 2 lbs. diced cooked chicken
- 2 tsp. ground oregano
- 6 cups chicken stock
- 1/4 tsp. ground cloves
- 2 medium onions, chopped
- 1/4 tsp. cayenne pepper
- 4 garlic cloves, minced
- 2 cups grated cheddar cheese
- 2 (4 oz) cans mild green chilies
- sour cream, chopped tomatoes, extra cheese, and cilantro
In a large heavy pot, saute onions until softened. Add garlic, chilies, and spices, and cook over low heat for 1 minute. Use the AVON Edgeless Can Opener with Strainer (pictured at left) to add beans. Add the stock, then bring to a boil and simmer for 1-2 hours. Add chicken and 1 cup of cheese, stir and cook for 5 more minutes.
